Dietary carbohydrate accessibility
Description
"Accessibility" refers to the immediate accessability of carbohydrates from foods for the digestive system, based on the level of processing after harvest. I.e. accessability does not refer to intrinsic properties of a given food in the unprocessed form, but rather to the changes that have been introduced to a food due to processing.
Purpose
To register foods in the diet of an individual, based on the accessability of carbohydrates, which can be used in a composite index of the degree of accessability of carbohydrates in an individual's diet.
Use
To estimate the carbohydate quality in clinical trials and epidemiologic studies. If the carbohydrate quality as defined here can predict health outcomes, the arcehtypes as defined here can be used in clinical practice to give dietary advice to patients.

This archetype has been designed to be used within the "Nutrients" SLOT of the OBSERVATION.food_item or in other ENTRY archetypes where clinically appropriate.
